Operations & service

From washing dishes to running the kitchen

I started with the dishes and kept learning another part of the job.

At a senior living community, I moved from washing dishes to serving, cooking and becoming head cook. We fed 100 seniors three meals a day. Getting to know them and talking openly about the food was one of my favorite parts.

At another community, I spent a year as culinary director. That meant hiring, schedules, food and labor budgets, purchasing and menus, as well as cooking and teaching the meals.

When helping a newer cook, I tried to give him room to learn and explain why a change was needed. Taking responsibility for a kitchen also meant helping other people become more confident in it.
